How do you feel about ramen noodles? When I first moved out on my own and money was really tight I liked to eat the Oriental flavored ramen noodles. But now that my taste buds have matured and money is not as tight?
Blah! Don’t like any of them. At all. But I do still like a quick, easy, warm and delicious soup.
This Asian Zoodle Soup is one that I love! Not only does it have the “oriental” flavor that I like but it also has noodles made from zucchini (zoodles) that I can make in about three minutes with my handy dandy kitchen tool…the .
That makes this soup a lot healthier and taste so much better than those little packs of the Oriental Ramen Noodles I used to eat. And it doesn’t take make longer to make either.
Just peel the skin off the zucchini, put it in the spiral slicer, and twist until you can’t twist no more. You’ll have a little bit of the zucchini left so just chop it into small pieces and throw those little chunks right on in the soup. Yummy!
This recipe makes two generous helpings so either halve the recipe to make or share it with a friend.

- 1 medium zucchini
- 3 cups chicken broth
- 1/8 tsp garlic powder
- 1/8 tsp ground ginger
- 1 tbsp soy sauce
- salt, a pinch
- 1 green onion, sliced
- Spiralize zucchini, set aside.
- To a medium pot add the broth, garlic powder, ground ginger, soy sauce, salt and green onion. Bring to a low boil.
- Toss in spiralized zucchini (zoodles) and cook just until warm, approximately two minutes (Zucchini cooks quick and overcooking will make it become mushy).
- Remove from heat and serve immediately.
