This is my favorite Saturday morning breakfast casserole recipe. It’s pretty easy to put together and its very filling. And although it contains spinach, my kids eat it up! By no means am I saying this casserole is “healthy”. It’s just an easy way for me to add some green veggies into my kids diet that they wouldn’t eat if it wasn’t incorporated into something delicious. Like this breakfast casserole…
First you will need to cook, crumble and drain 1lb of ground sausage.
Brown and crumble up some tater tots.
While all that’s going on, thaw and drain some frozen spinach.
Spray a 9×13 pan with some cooking spray, throw everything in and mix it all up. Pour on the egg/milk mixture, sprinkle with some cheese and throw in the oven for a bit.
After it comes out of the oven, you have to wait about 5 more minutes and then, FINALLY, you can plate it up (or eat out of the pan if you prefer:) and enjoy!
Ingredients
- 1 lb ground sausage
- 2 Tbsp Cooking Oil
- 1 1b Frozen Tater Tots, thawed
- 10 oz Frozen Chopped Spinach, thawed and squeezed of excess liquid
- Salt and Pepper to taste
- 12 Eggs, beaten
- ¼ cup Milk
- 1 cup Shredded Colby/Jack Cheese Mix
- Non Stick Cooking Spray
Instructions
- Cook sausage in skillet on medium heat. Crumble while cooking. When sausage is done drain and set aside.
- Add the oil and the tater tots to the pan. Crumble. Cook for approximately 10 minutes, stirring occasionally.
- Spray a 9x13 pan with cooking oil; add the sausage, tater tots and spinach. Mix well. Pour the beaten eggs over the mix.
- Sprinkle with cheese.
- Place in a 400° oven and cook for 20-25 minutes or until eggs are set.
- Let stand for 5 minutes before serving.
