When I was younger and starting life independent of my parents I had to eat cheap. Canned soup and grilled cheese sandwiches become a necessary meal for about 5 out of the 7 days of the week.

And tomato soup was my absolute fave! There’s just something about taking that hot grilled cheese sandwich, that’s oozing melted cheese, and dipping it into a big bowl of delicious tomato soup. Know what I mean? Of course you do.

As much as I loved the convenience of opening up a can of soup and nuking it for a minute you just can’t beat the taste of homemade.

Because I didn’t have any garden tomatoes for this creamy tomato soup recipe I used canned. But come summer time, when my homegrown tomatoes are ready, those are definitely what I will use.

I did leave the tomatoes diced because (1) sometimes I like the added texture and (2) I don’t have an …hint, hint, oh husband of mine

Creamy Tomato Soup

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: 4

Ingredients

  • 1 (14.5oz) petite diced can tomatoes
  • ½ onion, chopped
  • 1 tsp sugar
  • ¼ tsp ground thyme
  • ½ tbls cornstarch
  • 2 cups milk, divided
  • salt and pepper, to taste
  • shredded mozzarella cheese, for garnish
  • parsley, for garnish

Instructions

  1. Into a pot, add tomatoes, onion, sugar and ground thyme.
  2. Bring to a low simmer and cook for about 10 minutes.
  3. Mix cornstarch with ½ cup of milk. Add to pot.
  4. Pour in remaining milk and season, to taste, with salt and pepper.
  5. Simmer over medium heat, stirring occasionally, for 10 minutes.
  6. Pour into bowls and garnish with mozzarella and parsley.
