So, my new dear virtual friend, Regina, over at Cooking With Mama commented on my Slow Cooker Oriental Chicken Recipe the other day. She said that it made her want to make some egg rolls. Well, after she brought it up then I wanted to make some Homemade Egg Rolls. And so I did.
I’ve used this combination of ingredients for quite some time and it’s really good wrapped up in a crunchy egg roll wrapper.
I will tell you, though; unless you buy everything pre-shredded this recipe will take you more time than I generally like spending in the kitchen. Um well, not really, but I have an unnatural bond with my kitchen. I just hear a lot of other women say they don’t like spending huge amounts of time in the kitchen, when in fact it’s my favorite spot in the entire house. Dust the living room? Nope, I’m going to bake a cake. Make my bed? No, I think I’ll go bake some cookies. Watch a TV show? Naw, I’m making eggrolls. Am I crazy?
I don’t know, it’s just who I am. My family has yet to complain:) I’ll cook and they can dust the living room, make my bed, and watch TV. I like it, they like it, so all’s good. Right?
Anyway, if you buy the pre-shredded slaw mixture the only other thing would be to chop an onion, or omit it, and mince a clove of garlic, DO NOT OMIT THIS. Everyone should like garlic! Then the actual filling and wrapping of the egg roll is the last time- consuming part before you get to fry these deliciously crunchy babies up! Yum Yum!!!
Of course, you could be like me and recruit two of your kids to do the filling and wrapping while you’re doing the frying. That’ll cut your time in the kitchen!
Ingredients
- ½ cup onion, finely diced
- 1 cup carrot, shredded
- 3 cups cabbage, shredded
- 1 garlic clove, minced
- ¼ tsp black pepper
- 1 cup ground chicken, turkey or sausage- cooked and drained of any excess fat
- 1 tbsp water
- 1 ½ tbsp soy sauce
- 1 tsp vegetable oil
- 1 tsp brown sugar
- 1 tbsp + 1 tsp corn starch
- 14 eggroll wrappers
- Vegetable oil-enough to cover eggrolls and fry in a single layer.
Instructions
- Heat a non-stick skillet over med-high heat.
- Add onion, carrot, cabbage, garlic and pepper.
- Cook for about 3 minutes.
- Add meat and cook for about 1 minute more.
- In a separate small bowl, whisk together water, soy sauce, vegetable oil, brown sugar and cornstarch.
- Pour sauce mixture into skillet with chicken mixture; tossing well.
- Remove from heat and set aside.
- Fill each egg roll wrapper with ¼ cup meat/veggie mixture and fold egg roll style.
- Heat cooking oil to 350° and fry egg rolls until golden brown.
- Remove and drain on paper towels.

Ok, now it’s my turn! My freezer is barren of homemade egg rolls at this time and now I’m wanting them, so could you send some down? Mine take a whole lot more time and I use wine, oyster sauce and teriyaki sauce and then I let it marinade it over night, talk about some time! I’ll be waiting for your overnight package………These sound sooooo easy!
I wish I had enough left over to freeze for another time! My family eats all 14 at one time!!! And that’s even with putting it with my Slow Cooker Oriental Chicken recipe.
