This past weekend I was fortunate enough to be able to go to one of my most favorite places. THE FLEA MARKET!
The closest one I have to me is an hour away and only open on Saturdays and Sundays so I’m not able to go too often. I’m like a kid in a candy store when I get to visit that land of awesome treasures.
Not only did I come away with some really awesome Pyrex dishes at an extremely cheap, cheap price, I was also able to snag me some really delicious strawberries and pineapples for a very reasonable price.
These are Plant City, FL strawberries, mind you. Have you ever been to the Strawberry Festival in Plant City? I was able to go a few years ago and it was awesome! Tons of food, rides, shows and lots and lots of fresh juicy strawberries.
When I’m able to come across lots of yummy fruit I like to make this lite fruit pizza for the kids. It’s just fun, you know? And so pretty.
I use the Sweet As Sugar Cookies Recipe from the Splenda website to make the “pizza crust” and Neufchatel cheese in place of regular cream cheese for the topping.
So good!


- FOR THE COOKIE
- ½ cup butter, softened
- ½ cup Splenda
- 1 large egg
- 1 tsp vanilla extract
- 2 cups all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- cooking spray
- FOR THE TOPPING
- 1 8oz package Neufchatel cheese, softened
- ¼ cup Splenda
- ½ tsp vanilla extract
- 4 cups fruit, assorted
- FOR THE COOKIE
- In a large mixing bowl beat the butter at medium speed with an electric mixer until creamy.
- Gradually add in the sweetener, beating well.
- Add the egg, mixing well.
- Stir in vanilla.
- In a separate bowl combine the flour, baking powder and salt.
- Gradually add the flour mixture to the sugar mixture. Beat until blended. Do not over mix.
- Spray a 12-inch pizza pan with cookie spray.
- Spread the cookie dough evenly around the pizza pan.
- Bake in a 325° oven for 14-16 minutes or until edge of cookie is lightly browned.
- Cool slightly in pizza pan. Remove to wire rack to cool completely.
- Place cookie pizza on a round platter and make pizza!
- FOR THE TOPPING
- Beat Neufchatel cheese, sweetener and vanilla with electric mixer until blended; spread over crust.
- Top with fruit.
I love fruit pizza when the weather warms up, and this lighter version looks delicious!
