Chocolate is absolutely my most favorite sweet. When you add peanut butter (my second favorite sweet) to it…you have the best sweet ever invented.
It just so happens that my daughter, Taylor, loves chocolate too. When I told her I was making these Mini Peanut Butter Cookie Cups she was right there in the kitchen with me.
That’s her finger pushing in that little peanutty, chocolaty morsel of goodness. She’s like “Look mom, I can be a finger model”. And I was like “Yep sweetie, you can…maybe next time though we’ll touch up the blue fingernail polish”. It’s all good though. We were able to spend some mother/daughter time together making these delicious little babies.
That’s another good thing about these. It takes about 10 minutes to mix everything up, 8-10 minutes cooking everything, 5 minutes to push in the peanut butter cups, 10 minutes to cool, and a few seconds to woof them all down.
Maybe next time I’ll make a double batch…
Ingredients
- ¾ cup creamy peanut butter
- ½ cup butter
- 1 ¼ cups light brown sugar, firmly packed
- 3 tbsp milk
- 1 tbsp vanilla
- 1 egg
- 1 ¾ cups all-purpose flour
- ¾ tsp salt
- ¾ tsp baking soda
- 24 miniature peanut butter cups, unwrapped
Instructions
- Combine peanut butter, butter, brown sugar, milk and vanilla in a mixing bowl and mix until well blended.
- Add egg and mix just until blended.
- Combine flour, salt and baking soda in a separate bowl. Gradually add dry ingredients to wet ingredients, mixing just until blended.
- Fill each mini muffin tin with 1 tablespoon of mix.
- Bake in a 375° oven for 8-10 minutes.
- Remove from oven and immediately press one miniature peanut butter cup into center of each cookie cup.
- Cool for about 10 minutes; remove carefully from pan.
