Being born and raised in the South we have eaten our fair share of cornbread dressing. As a matter of fact that is my favorite Thanksgiving side dish. BUT, there are people who prefer stuffing.

This mushroom stuffing recipe is one I make for my family or friends who does not like cornbread dressing or who are vegetarians. It’s savory and full of the delicious flavors that I like in my traditional cornbread dressing recipe. And the top that gets crunchy after baking? Yum!

But that’s what comes with cooking for a huge family. I like cornbread dressing, someone else likes mushroom stuffing, I LOVE turkey, and someone else likes ham…or no meat at all.

Mushroom Stuffing

Ingredients

  • 8 cups white bread, cubed (about 15 slices)
  • 1 tsp oil
  • 1 (8oz) package mushrooms, sliced
  • 1 onion, diced
  • ½ tsp poultry seasoning
  • ½ tsp dried rosemary
  • ¼ tsp black pepper
  • salt, to taste
  • 1 tbsp dried parsley
  • 1½ cups broth (chicken, turkey or vegetable)

Instructions

  1. Place bread in a single layer on a large baking sheet.
  2. Bake in a 250° oven for 1 hour or until dry. Set aside.
  3. Heat oil in skillet over medium heat.
  4. Add onion and mushrooms to skillet and sauté until tender.
  5. Remove from heat and stir in poultry seasoning, dried rosemary, black pepper, salt and parsley.
  6. To a large bowl stir together dry bread cubes, mushroom/onion/seasonings mixture, and broth.
  7. Pour into an 11x7-inch baking dish that has been coated with non-stick cooking spray.
  8. Cover and bake at 350° for 15 minutes. Uncover and bake 20 more minutes or until top is crusty.
