I know I’ve said this more than once and I promise not to say it every time I post a slow cooker recipe but here I go “I LOVE MY SLOW COOKER!!!” The smells that emanate from that little kitchen appliance while your dinner is being cooked are almost unbearable. Not to mention I can just load it up and walk away from it for hours and when I return to the little magical piece of equipment dinner is almost done.

I also don’t have to heat up the house for a delicious dinner. I believe the heat index here in North Florida exceeded 100° today. Who wants to cook dinner in that kind of heat? Not this little lady:) I tried to be a good wife this morning and cook my husband a pound cake. THAT was an epic fail. Had the oven on for over an HOUR and the pound cake turned out awful! And I can’t tell you why because I have absolutely no idea what I did wrong. Oh well, can’t have all success stories, can we?

What did turn out successful was this Slow Cooker Oriental Chicken recipe. Oh yes, it is so yum! It’s another one of those recipes where you just through everything in and let it do its business. No pre-cooking anything here.

Then when your cook time is up, while your rice or noodles are cooking, just remove the chicken breast, shred ‘em up, toss ‘em back in with some broccoli and thickener.

Then in 30 more minutes dinner is served!

Slow Cooker Oriental Chicken

Prep Time: 15 minutes

Cook Time: 7 hours

Total Time: 7 hours, 15 minutes

Yield: 6-8 servings

Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 2 carrots cut in ¼ inch rounds
  • 2 cloves garlic, minced
  • ½ cup soy sauce
  • 1 cup water
  • ½ tsp ground ginger
  • ¼ cup brown sugar, packed
  • 2 TBSP oil-canola, vegetable or olive
  • ½ tsp red pepper flakes
  • 2 TBSP cornstarch
  • ¼ cup warm water
  • 1 cup broccoli florets

Instructions

  1. Put chicken and carrots in a slow cooker.
  2. In a small bowl combine garlic, soy sauce, water, ginger, brown sugar, oil and red pepper flakes. Pour over chicken, carrot mixture.
  3. Cook on low 6-7 hours or high for 3-4 hours.
  4. Remove chicken from slow cooker and shred into bite sized pieces.
  5. Stir together cornstarch and warm water.
  6. Add the shredded chicken, cornstarch/water mixture and broccoli florets back to the slow cooker. Cook on high an additional 20-30 or until mixture is at desired thickness.
  7. Serve over noodles or rice.
