I love my slow cooker. It’s probably the closest thing I’ll ever have to a personal chef. I just throw everything in her (yes, she’s a her) and by dinner time it’s done. I wish everything else was so simple.

Here’s an all-in-one slow cooker salsa chicken recipe that is really good. What do I mean by all-in-one you ask? Well, have you ever came across a slow cooker meal that looks really good and you just KNOW it would probably taste great and then you get to the recipe and you have to cook everything before you put everything in the slow cooker and cook it again? I HATE those recipes. I mean what’s the point? If you have to take the time to cook it all just to turn around and mess up ANOTHER dish to cook it again, I think I’ll pass on it. Well, that’s what I DON’T mean about an all-in-one slow cooker recipe.

An all-in-one slow cooker meal means everything goes in BEFORE it’s cooked and the slow cooker does all the cooking for you. ALL-IN-ONE! Now, that’s my kind of dish!

The only prep work you have to do before it all goes in is cut the chicken into bite sized pieces and that’s only if you want to do it. You could make it even simpler and throw them in whole and just shred ‘em when done. Cutting the chicken up is a personal preference. So, cut ‘em up or throw ‘em whole. Regardless of which you prefer, the slow cooker does everything else. Well, except setting the table and dishing up dinner and cleaning the kitchen afterwards. But, that’s what the kids are for, huh?

Slow Cooker Salsa Chicken

Prep Time: 10 minutes

Cook Time: 6 hours

Total Time: 6 hours, 10 minutes

Serving Size: 6-8

Ingredients

  • 2lbs chicken breast, boneless and skinless
  • 2 cups salsa
  • 1 15.25 oz can corn, drained
  • 1 15oz can black beans, rinsed and drained
  • shredded cheddar cheese
  • sour cream, optional

Instructions

  1. Cut chicken breast into bite sized pieces and place in slow cookre.
  2. Mix salsa, corn and black beans in a bowl. Pour over chicken.
  3. Cook on low 4-6 hours.
  4. Serve over rice or with tortilla chips.
  5. Garnish with cheese and sour cream, if desired.
