Here is a meatless meal that is so delicious that you won’t even miss the meat. And that’s saying a lot for my family.
Its spaghetti and meatballs, minus the meat, add in spinach and cheese…well you get the picture, MEATLESS and yummy and filling.
It’s not too often we eat a meatless meal around here but when we do I like to make things such as these Spinach and Cheese Dumplings that are swimming in your favorite spaghetti sauce.
These dumplings are a tad (okay…a lot) bigger than the heaping tablespoon called for in the recipe but I wanted to give you a really good picture of how appetizing these spinach and cheese dumplings really look. Did I succeed?
If only I could give you a sample taste. But the fact that they only take around 30 minutes to prepare you could definitely make them yourself for dinner tonight.


- 1 10oz package frozen chopped spinach, thawed and squeezed of excess liquid
- 2 cups baking mix
- ¾ cup grated parmesan cheese
- ½ cup grated mozzarella cheese, separated
- 2 eggs, beaten
- 1 tsp salt
- ½ tsp ground pepper
- flour, for rolling
- 2 cups prepared spaghetti sauce
- Bring a large pot of salted water to a simmer.
- Put spinach in a large mixing bowl and separate it with your hands.
- Add in the baking mix, parmesan cheese, ¼ cup mozzarella cheese, eggs, salt and ground pepper. Mix until a slightly sticky dough is formed.
- Spread the flour onto a large plate.
- Scoop out heaping tablespoons of the spinach-cheese mixture and roll into balls using floured hands.
- Gently roll the balls in the flour.
- Bring the spaghetti sauce to a simmer in a large skillet over medium heat.
- Once you have all the dough rolled into balls, start lowering them gently into the simmering salted water. Cook until they rise to the surface and are firm, about 5-7 minutes.
- Remove the dumplings with a slotted spoon and add them to your simmering sauce tossing gently to coat.
- Transfer dumplings to plates and sprinkle with the remaining mozzarella cheese.
This looks good but in looking at the NI, the sodium levels are through the roof. I guess that would be from the cheeses?
Yes, that and the spaghetti sauce.
