Have you ever wanted something so bad you didn’t really research the idea? You just kinda went to the store, bought everything you thought you needed, went back home, cooked it up, took a big ol’ bite out of it and said “HOLY MONKEYS, THOSE THINGS ARE HOT!!!”?
Well, that’s what happened to me the first time I made these Baked Jalapeno Poppers.
I love, love, love the jalapeno poppers you buy from the grocery store that’s pre-battered and all you have to do is just throw them in some hot grease and a couple minutes later you’ve got a creamy, cheesy, crunchy afternoon snack.
As with anything else I buy from the store pre-made I will eventually have to see if I can make my own homemade version. I wanted to see if I could make them but bake them instead of frying them and also cook them without all the breading. I could and the cheesy filling was really good. BUT, I’m a novice when it comes to picking out jalapenos. I honestly thought they were all pretty much the same level of heat; you just remove the ribs and seeds if you want them milder.
Boy was I wrong! As my family doesn’t really care for anything spicy I had always just settled for the Poppers you can buy in the frozen section of the grocery store. I’ve never really dealt with purchasing my own peppers.
I can say I learned two lessons from this little baked jalapeno popper recipe making exercise. (1) I can’t take near the heat I thought I could and (2) If a jalapeno pepper has white lines (kinda like stretch marks) on the skin? Those sum guns are HOT!
Sometimes you have to make a recipe twice to get it right:)
Ingredients
- 12 Jalapeno Peppers, cut in half lengthwise, seeds and ribs removed
- 1 lb Bacon, cooked and crumbled
- 8 oz Cream Cheese
- 1 cup Colby/Monterey Jack Shredded Cheese Mix, separated
- 1/8 tsp Garlic Powder
Instructions
- Blend together the bacon, cream cheese, ½ of the colby/jack cheese and garlic powder.
- Pack each jalapeno with mixture and place on a baking pan sprayed with cooking oil.
- Sprinkle the remaining colby/jack cheese over each jalapeno.
- Bake in a 375° pre-heated oven 20-25 minutes or until mixture is heated through and cheese has melted.
Notes
It's best to use gloves when handling jalapeno peppers.
