It’s about time for me to share another slow cooker recipe! It’s been a whole 11 days since I’ve posted one…man, time flies when you’re having fun:)
This recipe not only has a vegetable but a FRUIT included in it. Oooh, I love recipes where I can eat my fruits and veggies all in one.
It has a little bit of sweet going on with the pineapple and brown sugar but it also has a little bit of the salty too with the soy sauce and chicken broth.
This Slow Cooker Pineapple Chicken recipe is another one that you just throw everything in and let it do its thang while you’re doing your thang trying not to hurry it up because it smells so darn good.
I like to eat it over a big ‘ol plate of brown rice but I could totally just bowl it up and eat it without anything else added but then it would be Slow Cooker Pineapple Chicken Soup…yep, I like it!
This is a great combination of flavors anytime!
Ingredients
- 2 lbs chicken breast, boneless and skinless, cut into bite sized pieces
- 1 cup chicken broth
- ¼ cup soy sauce
- ¾ tsp ground ginger
- ½ cup brown sugar
- water
- 1 20oz can pineapple chunks, drained, juice reserved
- 2 cups carrots, cut into about ½ inch slices
- ¼ cup warm water
- 3 tbsp cornstarch
Instructions
- Place cut-up chicken over bottom of slow cooker.
- Mix together chicken broth, soy sauce, ground ginger, brown sugar and reserved pineapple juice in at least a 4 cup measuring cup.
- Add enough water to make 4 cups.
- Pour over chicken in slow cooker.
- Add sliced carrots.
- Cook on low 7-8 hours or on high 4-5 hours.
- Combine warm water and cornstarch.
- Stir in slow cooker.
- Add pineapple chunks.
- If cooking on low, turn setting on high and cook an additional 30 minutes or until desired thickness.
- Serve over rice.

Boy does this bring back memories! My mom used to make a very similar dish on the stove top but I think she added celery and something else. This was about 40 some odd years ago and after reading your recipe, my taste buds went crazy. Loved it over rice with lots of chow mein noodles over the top……………

love anything slow cooked as it means i can be EXTRA lazy.. this dish definitely brings back some childhood nostalgia!
I have made pineapple chicken in the slow cooker as well, just a little different. We serve it over rice as well.

Sounds easy and yummy! And I could easily modify it for our needs (we can’t do corn so I’d use arrowroot starch in place of the cornstarch and coconut aminos for the soy sauce.) Thanks for sharing.

I love dump and go recipes. I need all the help I can get when it comes to dinners. It seems that I never have enough time in the evenings so slow cooker meals are the way to go. You can’t beat coming home to a meal ready to eat.
