Hi There! Thanks so much to Adrian for having me on her fabulous blog. Today I wanted to share an appetizer recipe that is easy and delicious but also perfect for entertaining: Buffalo Chicken Bites. I highly recommend making these for the Super Bowl party you may be hosting/attending in a few weeks… even if you’re just there for the commercials, like me Best of all, this recipe uses minimal dishes, so cleanup is a breeze.
I’m a bit of a wimp about spice, but if you can handle the heat, feel free to use the Hot Tomatoes & Chilies version of Ro*Tel!
This Buffalo Chicken Bites recipe is also very easy to double (or triple, depending on how many men you have in the house).
If you don’t have fillo shells, you can make them out of regular fillo dough pretty easily using this tutorial: I did this a few weeks prior and froze them to use this month.
They’re best hot out of the oven, but you can make the chicken mixture ahead of time and refrigerate until you’re ready to fill the shells and bake.


- 4 ounces cream cheese
- 1 tablespoon cayenne pepper sauce
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained well
- 1 can (5 oz each) chunk chicken breast, drained (or leftover chicken, chopped or shredded)
- 1/2 cup shredded part-skim mozzarella cheese
- 22 frozen mini fillo shells (from 2 boxes, 1.9 oz each, also spelled “phyllo”)
- Preheat oven to 350°F. Place cream cheese and pepper sauce in medium microwave-safe bowl; cover. Microwave on HIGH 30 seconds; stir until smooth.
- Add drained tomatoes, chicken and shredded cheese; stir to combine, breaking up large pieces of chicken.
- Divide mixture evenly between fillo shells.
- Place filled shells into large shallow baking pan or sheet. Bake 15 minutes or until cheese melts.
