I know you guys have probably seen the cake pops that are all over the place right now. They seem to be pretty popular with folks right now. Well I wanted to make some for the kids as a Halloween treat until I saw all the steps involved. I’m a pretty impatient cook. I don’t like chilling things, then doing another step, then chilling again. No, I like to continue until it’s completed or it might not ever get done.

But doggone it I wanted to make these things! This candy cookie pops recipe takes the cake pops recipe to another level. This cookie mix does NOT have to be chilled (which means I can keep going from step one until completed) and then just use some melted Halloween candy.

I used Brach’s Autumn Mix and just separated the pumpkins from the candy corn so I could have two slightly different colors and flavors. This autumn mix has candy corn with one end being chocolate. Never seen them before but I likes:)

The cookie dough in this recipe is kind of dry and crumbly. It’s ok! That’s what you want. If it was any wetter it would spread. We want balls:)

Scoop you out a heaping tablespoon of this yummy cookie dough, knead it a couple time, then roll it into said balls.

Place balls in a mini muffin pan (or in a single layer on a baking sheet if you don’t have a mini muffin pan).

Melt your two different candies into two separate small pots. Dip the end of a popsicle stick into the melted candy and then immediately into the center of your cooked and cooled cookie balls.

After they set up (only takes about 5 minutes) dip the entire cookie ball into the melted candy, cool and enjoy!

Prep Time: 30 minutes

Cook Time: 12 minutes

Total Time: 1 hour

Yield: 48 Candy Cookie Pops

Serving Size: 1 pop

Ingredients

    For the cookie balls
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • 3 cups flour
  • 2 tsps baking powder
  • For the pops
  • 1 21oz bag Brach’s Autumn Mix Candy, separated
  • 48 popsicle sticks

Instructions

    For the cookie balls
  1. In a mixing bowl, cream butter and brown sugar until smooth.
  2. Stir in the vanilla extract and egg.
  3. In a separate bowl, combine flour and baking powder.
  4. Add the flour and baking powder mixture slowly to the wet ingredients until combined.
  5. Mixture will be crumbly.
  6. Scoop out a heaping tablespoon, knead a couple times and roll the dough into a ball.
  7. Place into an ungreased mini muffin pan.
  8. Cook in a 350° pre-heated oven for 10-12 minutes.
  9. Cool for 5 minutes then transfer to a cooling rack to cool completely.
    For the cookie candy pops
  10. Separate the bag of candy by placing the pumpkins in one sauce pan and the candy corn in another sauce pan.
  11. Melt on low, stirring occasionally, until all candy is melted. Keep the candy on the lowest heat setting possible until you are finished making the candy cookie pops. (If you decide to take the pans off the heat you can return them back to the stovetop to re-melt the candy at any time.
  12. Dip the tip of a popsicle stick into the melted candy and place immediately into the center of the cookie ball.
  13. Continue until all cookie balls have a popsicle stick.
  14. Allow to set up (about 10 minutes).
  15. Dip each cook ball completely into the melted candy, allowing excess to drip off.
  16. Slide the bottom of the cookie ball over the lip of the pan to remove excess candy.
  17. Place on aluminum foil that has been lighted coated with non-stick cooking spray.
  18. Allow candy cookie balls to completely set up.
  19. Store at room temperature.
