We love muffins around here. Sweet muffins, yes! Savory muffins, OH YES!
Muffins are so much easier and a lot quicker to whip up than bread made from yeast. And we like bread with our meal.
Especially if said bread is a quick muffin recipe made with some homemade baking mix that is already prepared and just waiting to go dancing with some cheese and dill.
And also especially if it’s these cheesy dill mini muffins that take no time to make but taste like they took a LOT of time. Because they are just that good. As a matter of fact, I could probably just eat these for my meal since one batch can produce you up to 48 of these little balls of yumminess.
So go forth and let your baking mix take your shredded cheese and dried dill out for a night of dancing because these little babies will surely do a tap dance in your mouth!
Ingredients
- 3½ cups homemade baking mix
- 2 tsp dried dill
- ½ tsp garlic powder
- 1 cup shredded sharp cheddar cheese
- 2 eggs, beaten
- ¼ cup butter, melted
- 1¾ cups milk
Instructions
- In a large bowl, stir together baking mix, dried dill, garlic powder and shredded cheese.
- Add eggs, butter and milk all at once.
- Stir until just combined.
- Spray a mini muffin pan well with non-stick cooking spray.
- Fill each muffin cup almost full.
- Bake in a 400° pre-heated oven for 12-14 minutes or until golden brown.
Notes
I don’t recommend using paper baking cups as they will stick.

These look wonderful…and I have some of that homemade baking mix sitting in my pantry. I’m assuming you could use any Bisquick substitute, correct?

Uh…YUM! I am with you…I love bread..quick bread..flavorful bread…and especially high yield recipes. Do these freeze well…I fear if I make a batch of these, I would eat them all..freezing them might help me…and my jeans! Thanks for sharing with us at Party in Your PJs.
Yep Kim, you can freeze and then pull out what you want (I recommend thawing first) and throw into the oven or microwave until just warm!
