Ok guys, it officially reached 100° today! With 100% humidity!! If you’ve never experienced that kind of heat then let me tell you what it feels like. When you are outside you can literally feel the weight of the air. And it is heavy and oppressive!! The air is so thick it’s hard to breathe.
My best advice? Stay indoors with the air conditioner and make these homemade chocolate yogurt popsicles.
You know what the hardest part about making these really lip-smacking chocolaty pops is?
WAITING for them to freeze!
Ingredients
- 2 cups yogurt-homemade or store bought
- 1 cup Splenda or other sweetener-see note below
- 2 TBSP vanilla extract
- ¼ cup cocoa, sifted
Instructions
- Combine all ingredients in a bowl and freeze in popsicle molds. You could also freeze in the small Dixie cups and insert popsicle sticks halfway through freezing time.
Notes
Using Splenda is my way of cutting back on added sugar for the kiddos but if that’s not an issue for you, I would suggest using a finely ground sugar, such as powdered sugar or even a liquid sweetener. You could also grind granulated sugar, until fine, in a food processor. This is to keep the pops from having a gritty texture.
