Sometimes I like fancy. And sometimes, I don’t. This classic potato soup is one of those times.
There’s nothing about this recipe that screams “fancy”. It’s a quick, easy and delicious soup that screams COMFORT! When I’ve had a long day and the last thing on my mind is cooking a big meal I turn to recipes like this one.
It’s a recipe that I’ve made many times over a lot of years.
It’s as simple as cutting up a couple of onions and potatoes…
Sautéing said onions in some butter…
Adding some broth, salt and pepper…
Ending with some milk or cream…
Serve it with some simple garnish. Easy peasy and so delicious!
Ingredients
- 2 tbsp butter
- 1 small onion, chopped (or about ¼ to ½ cup)
- 2 medium russet potatoes, peeled and cut into bite sized chunks
- 2 cups chicken broth
- salt and pepper to taste
- 1 cup milk or cream
- parsley, for garnish
Instructions
- In a medium pot melt butter over medium high heat.
- Add onions and sauté until translucent.
- Add the potatoes and chicken broth.
- Season with salt and pepper to taste.
- Bring to a boil and cook until potatoes are tender or about 10 minutes.
- Remove from heat and add milk for a lighter soup or cream for a richer soup.
- Garnish with chopped parsley when serving.

This looks like an easy dinner for when you don’t have much in the house and don’t feel like heavy cooking. Perfect timing since my 90 year old stepfather was just telling me his favorite soup is potato soup. I guess I’ll have to make some for him.
