I wanted to share these frozen cheesecake sandwiches with you before it became to cold for me to make and eat. Me and cold food with cold weather DO NOT MIX. Now my husband and kids on the other hand can eat frozen foods all year long, whether it’s 50° or 90° outside. But with these, if I make them I’m darn sure going to be eating one or two of them.
Because they are good!
What I basically did with this recipe was to use my no-bake cheesecake recipe and substituted the sugar for a box of vanilla instant pudding mix.
I then put enough of the cheesecake mix between two fudged covered graham crackers to equal a nice size treat and froze them overnight.
Believe it or not they taste a lot like the ice cream sandwiches you buy from the freezer section of the grocery store.
I thought I would add a little decoration for the kiddos so I added some Halloween colored chocolate balls around the middle of the sandwiches.
Ingredients
- 8oz cream cheese, softened
- 1 cup cool whip
- 1 3.4oz box instant vanilla pudding mix
- 1 tsp vanilla extract
- 24 fudge covered graham crackers
Instructions
- In a mixing bowl add cream cheese, cool whip, vanilla pudding mix and vanilla extract.
- Mix on low until combined.
- Divide the mixture evenly to the bottoms of 12 graham crackers.
- Top with the other 12 graham crackers and press down gently.
- Wrap individually with plastic wrap and freeze for at least two hours or overnight.

I am with you, I have a hard time eating cold foods when it is freezing outside. These look delicious enough to eat all year round though!

While I have absolutely no problem with cold foods throughout the year, I definitely can understand why you’d want to eat these before it gets to chilly outside! My husband is the same way, and I find we eat a lot more warm, comforting dishes and desserts during the cold months because of his preference.
