Garlic Mashed Cauliflower-Mock Mashed Potatoes

I’ve seen this recipe all over the web with different variations for quite some time now. As I’m always on the hunt for healthier food that my family will eat or even tolerate, for that matter, I decided to give this one a try. It’s supposed to be a replacement for mashed potatoes.

Is it? HECK NO!!! Although it still taste pretty good.

You will get no misconceptions here. Cauliflower has it’s own distinct flavor, as do potatoes. And I will tell you cauliflower DOES NOT taste like potatoes.

This dish is a creamy mashed cauliflower, flavored slightly with garlic, yum on anything, and Parmesan cheese. You could take this same recipe and make some REAL GARLIC MASHED POTATOES, though. Did I tell you cauliflower is NOT a replacement for potatoes?

Garlic Mashed Cauliflower-Mock Mashed Potatoes

Prep Time: 10 minutes

Cook Time: 12 minutes

Total Time: 22 minutes

Yield: 4

Ingredients

  • 2 16oz bags frozen cauliflower
  • ½ cup milk, warm
  • ¼ cup butter, melted
  • 1 garlic clove, finely minced or ½ tsp garlic powder
  • 1/3 cup grated parmesan cheese
  • salt and pepper to taste
  • parsley-optional

Instructions

  1. Cook cauliflower according to package directions. DO NOT OVERCOOK!
  2. Drain well.
  3. Place cauliflower in a mixing bowl or food processor.
  4. Add the milk, butter, garlic powder, parmesan cheese, salt and pepper. With hand mixer or food processor blend until smooth.
  5. Place in a serving bowl and garnish with parsley.
