If you only make one dessert this Thanksgiving, be sure to give this recipe a try. The longest part of this recipe is waiting for the delicious balls of crust to chill.
I’m not much on making my own homemade pie crust but this recipe is so easy and tastes so delicious. Especially when filled with this pumpkin pie filling.
These little mini pumpkin pies are so decadent and tasty. Not to mention just too darn cute! I made these for my kids’ class Thanksgiving party and everyone loved them. Not everyone wanted whipped cream on the top so I only did one for the photo (I ate that one:) and took the rest to the school for whoever wanted it.
Ingredients
- ½ cup butter, softened
- 1 (8oz) package cream cheese, softened
- 2 cups all-purpose flour
- ½ cup sugar
- ½ tbsp flour
- ½ tsp ground cinnamon
- ¼ tsp salt
- ¼ tsp ground ginger
- 1/8 tsp ground cloves
- 1 egg, slightly beaten
- 1 cup pure pumpkin (not pie filling)
- ¾ cup evaporated milk
Instructions
- Beat together butter and cream cheese until creamy.
- Gradually add in flour, beating slowly after each addition.
- Shape dough into 24 balls.
- Chill for 1 hour.
- Place one dough ball into each slightly greased mini muffin pan and shape each into a thick shell.
- Spoon pumpkin pie filling (directions below) into crust shells.
- Bake in a 350° preheated oven for 15 minutes; reduce heat to 250° and bake 15 more minutes.
- Cool in muffin pan on wire rack for 10 minutes.
- Remove mini pies from pan and cool completely on wire rack.
For the Pumpkin Pie Filling
- Whisk together the sugar, flour, cinnamon, salt, ginger and cloves.
- Stir in the egg, pumpkin and evaporated milk until combined.

I love this idea! My husband doesn’t like pumpkin, so I only get once slice a year when my father-in-law makes it for Thanksgiving. But with these, I could bake a batch and freeze the ones I don’t eat…any time of year! Thanks for sharing. Pinning
