Tacos are probably this family’s most favorite meal. And by no means am I kidding! Every time they help me do a menu plan about the only help I get from the kiddos is “we want TACOS!” But sometimes this momma just has to change things up a bit:) If you happened to see my post on pizza cups a couple of weeks ago you know that I like to take normal meals and turn them into something not so normal. If you didn’t see it, go on and check it out, I’ll wait for you to get back.
Ok, now that you’re back you probably know where I’m going with this…yes siree, Mini Tacos!
I had some leftover wonton wrappers from the pizza cups recipe and, of course, my family wanted tacos so I decided to put the two together for these awesome little morsels of spicy goodness.
It takes less than 30 minutes to put these together and the whole family enjoyed them! So that makes this mini taco recipe a total keeper:)
I just browned some lean ground turkey with my homemade taco seasoning,
put some wonton wrappers in my muffin pan, added said seasoned meat, topped with cheese,
baked them for a bit and topped them off with some lettuce, tomatoes and salsa.
Ingredients
- 1 lb lean ground beef or turkey (I use turkey)
- 1 tbsp homemade taco seasoning
- 12 wonton wrappers
- 1 cup shredded cheddar cheese
- toppings: shredded lettuce, tomatoes, salsa, etc.
Instructions
- Place ground turkey and taco seasoning in a skillet.
- Cook on med-high heat until done, breaking up meat as it browns.
- Place one wonton wrapper into each individual muffin cup.
- Divide browned meat evenly into each wonton.
- Top each mini taco cup with shredded cheddar cheese.
- Cook in a 350° oven for 15-18 minutes or until cheese is melted and wonton wrappers are nice and brown.
- Remove from oven and top with favorite taco toppings: lettuce, tomatoes, salsa, etc.

I haven’t even gotten to the pizzas yet, what are doing to me! Maybe we’ll have a Italian/Mexican night and mix it up, yup, that’s what I’ll do! Nice and easy after a long day on working around the house and yard………………. Also both would be great for munching on during the football games coming up with a nice cold brew!!!!!
