Mixed Fruit Preserve Bars

So I was going through my cabinets trying to figure out something to make for a dessert. Well, I just so happen to come across a jar of homemade mixed fruit preserves that my husband’s grandmother made and had given to us LAST YEAR!

And I’m like “are you freakin’ kidding me?” She makes THE best preserves and I had completely forgotten about this jar of deliciousness in the back of my cabinet. (Yes, it’s been that long since I have been in the back of my cabinets. Don’t judge…it happens).

Then I’m like, heck yeah, I’ll use my oatmeal bar crust recipe and make us some Mixed Fruit Preserve Bars.

The first picture is half of the oatmeal crust pressed into the bottom of the pan. The second is the yummy preserves. The third is my bright idea to roll the other half of the crust onto a piece of foil so I can achieve the look of the fourth picture. Pretty smart huh? Yeah, I though so too:)

Oooh look at all that bubbling deliciousness! The oatmeal crust on these babies has a nice crunch going on and the inside is so soft and gooey.

I have one piece of advice for you when you decide to make this mixed fruit preserve bars recipe. Have some willpower. If you cut into it before it’s completely cooled it will look like this…

As you can see I have no willpower. Just don’t say I didn’t warn you!

But after they’re completely cooled and you cut into them they look like this…

Mixed Fruit Preserve Bars

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Yield: 24 bars

Serving Size: 1 bar

Ingredients

  • 1½ cup all-purpose flour
  • 1½ cup quick cooking oats
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup brown sugar, firmly packed
  • 1 cup butter, melted
  • non-stick cooking spray
  • 1 cup homemade mixed fruit preserves or any flavored preserves or jam of your choosing

Instructions

  1. Preheat oven to 375°
  2. Combine flour, quick oats, baking soda, salt and brown sugar in a large bowl.
  3. Stir in melted butter until you can form a ball that doesn't fall apart.
  4. Press half of the dough firmly into bottom of a 9x13 pan that has been coated generously with non-stick cooking spray.
  5. Spread preserves evenly over crust to within ½ inch of all sides.
  6. Flatten the remainder crust on wax paper or aluminum foil to the size of the 9x13 pan. Gently place crust over the top of preserves by picking up and flipping over the paper or foil.
  7. Remove paper or foil and press lightly.
  8. Bake for 30 to 35 minutes or until top is a light golden brown.
  9. Cool completely.
