All my kids like pancakes. With all four of them being at home all day over the summer (as opposed to only one during the school year) I look for ways to stretch our dollars. This oatmeal pancake recipe is one of those ways.
Oatmeal is relatively inexpensive and a little bit goes a long way. These oatmeal pancakes are also hardier, or what I like to call “more rib stickin”, than regular pancakes. So the kiddos aren’t as quick to tell me they’re hungry right after they just ate breakfast, which happens more days than not. Oatmeal is also healthier for you. And if you’re on the wheat flour band wagon then that makes them even healthier.
And other than adding some quick oats to the mix it doesn’t require anything more than it would if you just whipped up a regular pancake recipe. The batter will look a little liquidy but after it sits for about five minutes it will thicken up.
This recipe makes about 20-25 good sized pancakes. I take the leftovers and freeze them in an individual layer on a cookie sheet. After they are completely frozen I store them in a freezer bag in my freezer until (1) I need a quick meal or (2) If I don’t have anything for the kids to snack on then they can just grab one out the bag and nuke it for a minute. Instant snack:)
Ingredients
- 3 cups quick oats
- 1 cup all-purpose flour
- ¼ cup brown sugar, packed
- 2 tsp baking soda
- ½ tsp baking powder
- 1 tsp salt
- 2 ½ cups milk
- 4 eggs
- 2 tsp vanilla
Instructions
- To a large mixing bowl add quick oats, flour, brown sugar, baking soda, baking powder and salt.
- Stir until well combined.
- Add the milk, eggs and vanilla.
- Mix until just combined.
- Let rest for 5 minutes.
- Cook on a griddle over medium heat.
Notes
The mixture will seem real liquidy at first but the oats will soak it up fairly quick. If it is too thick add about ½ cup more milk.

I love this idea! Like you mentioned, it’s so important to find foods that stay with us a little longer and keep us (and kiddos) fuller. I’m sure these digest slower and are better on the glycemic index, too. Thanks for sharing!
