Peanut Butter and apples. On a warm crispy tortilla shell. That’s about all that needs to be said about this recipe. These little quesadillas are a great snack or you can serve them for a quick lunch. Heck, I’ll even serve them for dinner on nights I just can’t bring myself to slave over a hot stove for more than 10 minutes.
They’re extremely filling. Not to mention tasty. And if you use whole wheat tortillas and natural peanut butter they are healthy for you. My kids and I love everything there is to love about these little gems.
Warm peanut butter, warm apples,
and a warm crispy tortilla shell.
Yup, these are good!
Ingredients
- 8 Tbsp peanut butter
- 4 tsp honey
- 1 apple, cored and sliced thin
- 4 flour tortillas (10-12in)
- 4 tsp oil or non-stick cooking spray
Instructions
- Combine the peanut butter and honey in a bowl.
- Spread 2 Tbsp of peanut butter/honey mixture to 1 flour tortilla.
- Place ¼ of the apples slices over ½ of the tortilla. Fold the other half of the tortilla over the side with the apples.
- Drizzle skillet with 1 tsp of the oil or spray a light coat of non-stick cooking spray and heat to medium.
- Place one quesadilla into pan and brown. Turn and brown other side.
- Continue cooking all quesadillas until done.
- Cut each quesadilla in fourths to serve.

This sure sounds like a yummy snack or lunch! Unforutnately, my husband is allergic to peanuts.
