Peanut butter and jelly goes together like cake and ice cream, milk and cookies, peaches and cream…you get the picture.
BUT have you ever had a warm peanut butter muffin with jelly inside? These little babies are the bomb diggity! And they take less than 30 minutes from start to finish.
My husband’s sweet grandmother is all the time giving us her amazing homemade preserves. That’s what I used in this recipe. And it just made them even better.
If you don’t have any homemade preserves you can use the store bought fruit preserves or even jelly. I know, it’s actually a recipe for peanut butter and preserve muffins but I didn’t think that sounded right.
So peanut butter and jelly muffins it is!
Ingredients
- 2 cups all-purpose flour
- ½ tsp salt
- 1 tbsp baking powder
- 1/3 cup sugar
- ½ cup creamy peanut butter
- 2 eggs, slightly beaten
- 1 cup milk
- 6 tsp jelly or preserves, any flavor
- powdered sugar, for dusting
Instructions
- Combine flour, salt, baking powder and sugar in a mixing bowl.
- Cut in peanut butter until coarse and crumbly.
- Stir in eggs and milk until combined. Batter will be lumpy.
- Grease a 12 cup muffin pan or line with baking cups.
- Fill each cup 2/3 full.
- Drop ½ tsp jelly or preserves into the center of each cup.
- Bake in a 400° pre-heated oven for 18 minutes or until golden brown.
- Cool slightly on a wire rack.
- Dust with powdered sugar.
Notes
These are best served warm. Store leftovers in the refrigerator for up to three days. Warm slightly before eating.
