I like pizza! I mean, I REALLY like pizza! I’m that person that will have pizza for dinner and the next morning get up and eat the leftovers straight from the fridge for breakfast. Because pizza is my favorite food group (yep, it’s in its own food group in my world) I decided to combine the two and make a breakfast dish that incorporated breakfast with the flavors of pizza.
It’s a Pepperoni Pizza Frittata! I took my Mushroom, Spinach and Cheese Frittata recipe and swapped out those vegetables for pepperoni, tomatoes and mozzarella cheese.
Oh My Goodness! You will not believe how much this egg breakfast tastes like a pepperoni pizza! And you don’t have to go through the long process of making pizza dough. You just beat some eggs and pile everything else on top! How easy is that?
As a matter of fact, it’s so easy that this may become my permanent pizza recipe! Instead of eating cold pepperoni pizza for breakfast, I’ll be eating breakfast pepperoni pizza frittata for DINNER! Or LUNCH! Or BRUNCH!
A note about the recipe…I used fresh parsley to garnish the top of the “pizza”. That’s what I had on hand so that’s what I used. You could absolutely use fresh basil or a sprinkling of grated parmesan for your “garnish” or use nothing at all. If you want to use an uncooked meat, such as hamburger or sausage, you will need to cook that done BEFORE putting it on your pizza frittata.
Ingredients
- 8 eggs
- ¼ cup heavy cream or milk
- 1 tsp oregano
- salt and pepper, to taste
- 1 cup grated mozzarella cheese, divided
- 2 tbsp olive oil
- 1 roma tomato, sliced thin
- 10 slices pepperoni
- ¼ cup fresh parsley, chopped
Instructions
- In a bowl whisk together the eggs and cream or milk.
- Add the oregano, salt, pepper and ½ cup of the mozzarella. Whisk until well blended.
- Pour the olive oil into a 10 inch oven proof skillet over medium heat.
- Pour the egg mixture over the olive oil and cook without stirring until the frittata begins to set on the bottom, about 3 or 4 minutes.
- Place the thinly sliced tomatoes and the pepperoni slices on top of the eggs.
- Sprinkle on the remaining mozzarella cheese.
- Place the skillet in a 400° preheated oven and cook until the frittata is set, about 15 minutes.
- Use a spatula to loosen the frittata and slide it onto a serving plate.
- Sprinkle on the parsley, basil or parmesan cheese.
