My kids put in a request for some homemade cinnamon rolls this weekend. As much as I love them too I just didn’t have the time or energy to make them.
So, remembering how easy my pumpkin chocolate poke cake was to make I had an idea to combine the pumpkin cake with the flavors of a cinnamon roll.
This cake batter is thick enough that you can make the swirls in it and just pour the melted cinnamon mixture into them.
How easy is that? Not only is this pumpkin cinnamon swirl cake easy to make but it tastes really close to a cinnamon roll.
This was definitely a win win recipe! The kids got the taste of cinnamon rolls and I didn’t have to take the time to make homemade bread:)
Ingredients
- 2¼ cups all-purpose flour
- 1 cup sugar
- 3½ tsp baking powder
- 1 tsp salt
- ½ tsp ground cinnamon
- 1 15oz can pumpkin
- 1 tbsp vanilla extract
- ½ cup butter, melted
- ¾ cup brown sugar, packed
- ½ tsp ground cinnamon
- Leftover cinnamon swirl mixture-should have ¼ to ½ cup mixture left
- ½ to ¾ cup powdered sugar
Instructions
- In a mixing bowl combine flour, sugar, baking powder, salt and ground cinnamon.
- Add pumpkin and vanilla extract and mix until combined.
- Spread batter into a 9 inch round cake pan that has been sprayed with cooking spray or buttered well.
- Take the end of a butter knife and make swirls all the way around the batter, going down into the batter, a little over half way through.
- Pour the cinnamon swirl mixture into the swirls until full.
- Bake in a 350° oven for 30-35 minutes or until cake is set.
- Cool completely on a wire rack.
- To serve cake, invert onto a plate then invert again onto a serving platter.
- Drizzle with melted glaze when serving.
For the Cinnamon Swirl
- In a small saucepan melt the butter over medium heat.
- Add in the brown sugar and cinnamon and cook on low heat until sugar is dissolved.
For the Glaze
- Put the leftover cinnamon swirl mixture into a small mixing bowl.
- Add enough of the powdered sugar (I used ½ cup) to make a pourable glaze.
- Pour over cooled cake to serve.

Hi..Looks de-lish:)f I wanted to add pecans or walnuts should I put them in the cake or cinnamon swirl mixture?
I would put them in the cinnamon swirl mixture:) Of course if you really like nuts you could put them in both and be okay. Hope you enjoy!
Does this need a DEEP 9″ or regular 9″ cake pan? Looks like a lot of batter?
A regular 9″ cake pan is what I use, Sue.
