These cupcakes are light, moist and taste sinfully yummy. And then to top it with a tangy yet oh so delicious cream cheese frosting? Ohhhh…its pure heaven in the palm of your hand!

This recipe makes 24 cupcakes, which is the perfect amount for my youngest to take to school for their upcoming Valentine’s Day class party. These red velvet cupcakes were a trial run using these awesome . With each tube containing 100 luminescent light bracelets I could afford to make a couple of trial runs

So, not only do the kiddos get a delicious Valentine’s Party dessert they can take the little surprise that’s in them and play with it for hours because they also come with 100 connectors. They can hook the ends together and make bracelets, necklaces and/or glasses!

I would have to say that these are the best glow sticks I have found so far. I usually buy the ones from the dollar tree but they are cheaper made, more expensive ($1 for 4) and don’t last near as long or get near as bright as these do. And if you have  it’s two day free shipping.

Ingredients
  1. -For the Red Velvet Cupcakes
  2. 2 ½ cups all purpose flour
  3. 1 ½ cups sugar
  4. 1 tsp baking soda
  5. 1 tsp salt
  6. 1 ½ tbsp cocoa powder
  7. 1 cup vegetable oil
  8. 1 ½ cups buttermilk (see notes)
  9. 2 large eggs, beaten
  10. 1 tbsp red food coloring
  11. 1 tsp distilled vinegar
  12. 1 tsp vanilla extract
  13. -For the Cream Cheese Frosting
  14. ½ cup butter, softened
  15. 1 8oz. cream cheese, softened
  16. 4 to 4 ½ cups powdered sugar (the more you use the stiffer your frosting will be)
  17. 1 tsp vanilla extract
Instructions
  1. -For the Red Velvet Cupcakes
  2. In a bowl, sift together the flour, sugar, baking soda, salt and cocoa powder. Set aside.
  3. In a large bowl beat together gently the oil, buttermilk, eggs, food coloring, vinegar and vanilla.
  4. Add the dry ingredients to the wet ingredients and mix until smooth and thoroughly combined. DO NOT OVERMIX.
  5. Divide the batter evenly (about 2/3 full) between two 12-cup muffin pans that have been lined with cupcake papers.
  6. Bake in a 350° preheated oven for 20-22 minutes or until a toothpick inserted into the middle of a cupcake comes out clean.
  7. Remove from oven and cool completely on a wire rack before frosting.
  8. -For the Cream Cheese Frosting
  9. Beat together the butter, cream cheese and vanilla.
  10. Add in up to 4 ½ cups powdered sugar or until frosting is as stiff as you like.
Notes
  1. If you don't have buttermilk you can make your own by adding 1 1/2 tbsp vinegar to a measuring cup. Pour milk into cup until it reaches 1 1/2 cups total. Let sit for about 5 minutes.
  2. To assemble cupcakes: Sanitize Glow Sticks in warm soapy water, rinse and dry completely. Cut out 24 small hearts and 24 larger hearts from red or pink cardstock. After cupcakes have cooled completely, and before frosting, use a sharp knife to start a hole in the side of cupcake. Finish poking the hole through using a skewer. Push Glow Stick through hole. Attach the hearts to look like an arrow using small pieces of tape.
  3. To make the chocolate hearts: Melt chocolate bark according to package directions. Put into a ziplock bag. Snip off the end and draw hearts on wax paper. Let them cool completely. Remove gently. Place on top of frosted cupcakes.
