Have you ever heard of “Pear Jalapeño Pepper Jelly”? If you have, well you’re ahead of the game but if you haven’t, well then, let me tell you, it is sooo delicious! It has pears, jalapenos (duh!), green bell pepper, red bell pepper, etc. I’m not sure what else…see note below.
My sweet dad gave me a jar of this delightfulness a little while back and told me it was really good with fried fish.
Well, as I’m the only one in my family who likes anything remotely spicya quart size jar of this yummy stuff was all mine (we fish, but not near as much as my dad). Because we don’t fish as much as him I had to figure out something else to do with it. It’s just a little bit sweet and a little bit spicy, but not to the extent that you might think it would be with jalapeno peppers involved. Anyway, I’m supposed to be giving you a Slow Cooker Spicy BBQ Chicken recipe. I’m getting to it, I promise.
As I was saying, I had a whole jar of this pepper jelly to eat and I REALLY DID NOT want to eat it by myself, it’s good, but again, it’s also sweet. So I set out to “hide it” so the fam would eat it. I bet you can guess where I’m going with this…yep, I mixed it in my Spicy BBQ Chicken recipe and threw it all in the slow cooker.
The family couldn’t resist. When the slow cooker is going all day and the house is filled with the deliciousness coming from it, believe me, it would be hard for anyone to resist.
I served this with the Garlic Mashed Cauliflower recipe.
Note: I should have some pears ready to pick shortly and my dad promised he would give me the recipe to make some of the relish. When he does, I will make it and post the recipe:)
If you don’t have any Pear Jalapeno Pepper Jelly you could substitute Jalapeno Pepper Jelly from the grocery store.
Ingredients
- ½ cup tomato sauce
- ¼ cup pear jalapeno pepper jelly
- 2 TBSP lime juice
- 1 tsp brown sugar
- 1 tsp cumin
- ¼ to ½ tsp red pepper flakes, depending on your heat tolerance
- 1 tsp salt
- 8 chicken thighs and/or drumsticks, skinned
- 2 TBSP cornstarch
- ¼ cup warm water
Instructions
- In a bowl combine tomato sauce, jelly, lime juice, brown sugar, cumin, red pepper flakes and salt. Pour over bottom of slow cooker.
- Place chicken, meaty side down, on the sauce mixture.
- Cook on low for 7 hours or on high for 3-4 hours.
- 30 minutes before done, stir together the cornstarch and water. Add to slow cooker and cook on high or until thickened.
