Cookies for breakfast! That’s how we roll in this house!
Mornings around here are pretty hectic, as I’m sure they are in many other homes:) I like to have something quick and easy for the kids for breakfast. Something I can make up ahead of time and freeze and just pull out what I need when I need it.
This recipe is made even easier because it is one I use with my homemade baking mix recipe! Yep, this is the fourth recipe using my homemade baking mix. If you missed the other three recipes, they are a really easy homemade biscuit recipe, a scrumptious pear cobbler recipe and a delicious pumpkin chocolate chip quick bread recipe. See why it’s so handy to have a big ol’ batch of this sitting in your freezer?
These breakfast cookies are one of those recipes that you can double or triple the batch. You can cook some and freeze some and then it’s a simple matter of pulling out a tub of dough, thawing it and baking it the night before or the morning of. It’s also pretty easy to change out the add-in part of the recipe. One time I’ll put crushed trail mix, another time I’ll put in raisins or I’ll even put in chocolate chips (like I did this time). They’re kinda like my oatmeal pancake recipe but in the form of a cookie, which the kids totally love. Pair it with a bowl of fruit and you have a quick and easy breakfast!
You will just need to mix and scoop,
bake and cool!
That’s it! Another easy peasy delicious recipe!
Ingredients
- 2 cups baking mix
- 2 cups quick oats
- 1 cup brown sugar, packed
- 2 eggs, beaten
- 1 tsp vanilla
- ½ cup milk
- 1 cup raisins, chocolate chips or trail mix
Instructions
- Combine baking mix, quick oats and brown sugar in a large mixing bowl.
- Add eggs, vanilla and milk, stirring until combined.
- Fold in raisins, chocolate chips or trail mix.
- Bake in a 350° pre-heated oven for 15 minutes.
- Place baked cookies on a wire rack to cool.
Notes
You can double or triple the batch and freeze some for another time. Just thaw, scoop and bake for a quick and easy breakfast!

Not a breakfast eater, these would go great with our coffee in the morning! Did you ever use butterscotch chips? I bet they’d be great with the oatmeal and brown sugar! Bet the kids love having these treats for breakfast!!!
Hey Regina, I tried butterscotch chips one time and I liked it but the kids weren’t too fond of it so I don’t make them anymore. And yes the kids are pretty excited when I make these because although they have oatmeal in them they are still a cookie:) This is one of my quick make the night before because I don’t have time to make anything else recipes!

BREAKFAST COOKIES! I love this idea. I am always in a rush to get out the door each morning, and I often skip breakfast. I need to make some of these, there is always time for a cookie. I am thinking dried cranberries and white chocolate would be YUMMY!

These look amazing! My daughter would love these as she generally has a cereal bar for breakfast. We will have to bake these soon with school starting back up.
My kids started back to school a couple of weeks ago and these breakfast cookies definitely make our mornings run a little smoother:) Just can’t beat a good grab and go breakfast!
