Cookies for breakfast! That’s how we roll in this house!

Mornings around here are pretty hectic, as I’m sure they are in many other homes:) I like to have something quick and easy for the kids for breakfast. Something I can make up ahead of time and freeze and just pull out what I need when I need it.

This recipe is made even easier because it is one I use with my homemade baking mix recipe! Yep, this is the fourth recipe using my homemade baking mix. If you missed the other three recipes, they are a really easy homemade biscuit recipe, a scrumptious pear cobbler recipe and a delicious pumpkin chocolate chip quick bread recipe. See why it’s so handy to have a big ol’ batch of this sitting in your freezer?

These breakfast cookies are one of those recipes that you can double or triple the batch. You can cook some and freeze some and then it’s a simple matter of pulling out a tub of dough, thawing it and baking it the night before or the morning of. It’s also pretty easy to change out the add-in part of the recipe. One time I’ll put crushed trail mix, another time I’ll put in raisins or I’ll even put in chocolate chips (like I did this time). They’re kinda like my oatmeal pancake recipe but in the form of a cookie, which the kids totally love. Pair it with a bowl of fruit and you have a quick and easy breakfast!

You will just need to mix and scoop,

Breakfast Cookies

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

Yield: About 30 cookies

Ingredients

  • 2 cups baking mix
  • 2 cups quick oats
  • 1 cup brown sugar, packed
  • 2 eggs, beaten
  • 1 tsp vanilla
  • ½ cup milk
  • 1 cup raisins, chocolate chips or trail mix

Instructions

  1. Combine baking mix, quick oats and brown sugar in a large mixing bowl.
  2. Add eggs, vanilla and milk, stirring until combined.
  3. Fold in raisins, chocolate chips or trail mix.
  4. Bake in a 350° pre-heated oven for 15 minutes.
  5. Place baked cookies on a wire rack to cool.

Notes

You can double or triple the batch and freeze some for another time. Just thaw, scoop and bake for a quick and easy breakfast!
