I love a good quick bread and this coconut banana bread recipe is one that my whole family loves. That in itself is a rare feat. It’s usually daddy not liking some ingredient or one or two of the kiddos not liking something OR daddy likes it but NONE of the kids do.

Coconut Banana Bread

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Ingredients

    For the bread
  • 2 cups all-purpose flour
  • ¾ tsp baking soda
  • ½ tsp salt
  • 1 cup sugar
  • ¼ cup butter, softened
  • 2 eggs
  • 1 cup mashed ripe bananas, (about 2 bananas)
  • ½ cup plain yogurt
  • 3 tbsp milk
  • ½ tsp vanilla extract
  • ½ tsp coconut extract
  • ½ cup plus 2 tbsp sweetened flaked coconut, divided
  • For the glaze
  • 2 tbsp sweetened flaked coconut
  • ½ cup powdered sugar
  • 1½ tbsp milk

Instructions

    For the bread
  1. Preheat oven to 350°
  2. In a bowl whisk together the flour, baking soda and salt. Set aside.
  3. In a separate mixing bowl add the sugar and butter. Beat at medium speed until well blended.
  4. Add eggs, one at a time, beating well after each.
  5. Blend in the banana, yogurt, milk, and extracts.
  6. Add the flour mixture, mixing until just moist.
  7. Fold in the ½ cup sweetened flaked coconut.
  8. Pour batter into a 9 x 5 –inch loaf pan that has been coated with cooking spray.
  9. Sprinkle with 2 tbsp flaked coconut.
  10. Bake at 350° for 1 hour or until toothpick inserted in middle comes out clean.
  11. Cool 10 minutes, in pan, on wire rack. Remove from pan.
  12. Drizzle with glaze.
    For the glaze
  13. In a small bowl, stir together the flaked coconut and powdered sugar.
  14. Whisk in the milk.
  15. Drizzle over warm bread.
