I love a good quick bread and this coconut banana bread recipe is one that my whole family loves. That in itself is a rare feat. It’s usually daddy not liking some ingredient or one or two of the kiddos not liking something OR daddy likes it but NONE of the kids do.
Why can’t they just be like me and like everything?
Since this will probably never happen I’m constantly on the look out for ingredients that I can combine and the whole family will eat. With this recipe you have coconut (), bananas (
), a simple coconut glaze (
). All those checks can mean only one thing.
This coconut banana bread recipe is a keeper!
Ingredients
- 2 cups all-purpose flour
- ¾ tsp baking soda
- ½ tsp salt
- 1 cup sugar
- ¼ cup butter, softened
- 2 eggs
- 1 cup mashed ripe bananas, (about 2 bananas)
- ½ cup plain yogurt
- 3 tbsp milk
- ½ tsp vanilla extract
- ½ tsp coconut extract
- ½ cup plus 2 tbsp sweetened flaked coconut, divided
- 2 tbsp sweetened flaked coconut
- ½ cup powdered sugar
- 1½ tbsp milk
Instructions
- Preheat oven to 350°
- In a bowl whisk together the flour, baking soda and salt. Set aside.
- In a separate mixing bowl add the sugar and butter. Beat at medium speed until well blended.
- Add eggs, one at a time, beating well after each.
- Blend in the banana, yogurt, milk, and extracts.
- Add the flour mixture, mixing until just moist.
- Fold in the ½ cup sweetened flaked coconut.
- Pour batter into a 9 x 5 –inch loaf pan that has been coated with cooking spray.
- Sprinkle with 2 tbsp flaked coconut.
- Bake at 350° for 1 hour or until toothpick inserted in middle comes out clean.
- Cool 10 minutes, in pan, on wire rack. Remove from pan.
- Drizzle with glaze.
For the glaze
- In a small bowl, stir together the flaked coconut and powdered sugar.
- Whisk in the milk.
- Drizzle over warm bread.

Hi Adrian, well I got busy yesterday and among the cooking I did I baked your recipe for the Coconut Banana Bread, midstream I forgot and had to run and get the coconut flavoring, and a few other things, but drum roll……The Banana bread is a hit!!!! Yumculicious!!!! We absolutely love it, wonderful flavor, not to sweet. My husband immediately ask for a second piece. and my secretary went coo cu for cocoa puffs!!! Cant wait to try on the second day.

Adrian, this looks amazing. I love banana bread and coconut…but I’ve never had the two together (where have I been??). I always have bananas on hand, and I *just* bought coconut for Thanksgiving baking…..it’s a sign, I tell ya!
