This lemon cake is another recipe that I make using my homemade baking mix. (If you’ve missed the other four recipes I’ll have a link to them added to the bottom of this post). It is a very dense cake and it is full of lemon flavor. With our heat index pushing 115° the past few days I wanted something with a lemon flavor other than a lemon flavored drink.
This lemon cake was just what I needed. Although I had to turn the oven on for over an hour to make it, it was well worth it!
The best part of this cake is the added candied lemon slices that are added to it. If you’ve never made candied lemon slices then boy are you in for a treat! I didn’t use all of the slices for the cake so I just walked around and snacked on the rest of them throughout the day:) They taste just like those little lemon candies (Lemonheads) you buy at the store. Only better because they are made with real lemon and came from your kitchen!
After using what I needed of the syrup from the candied lemon slices, I put the remainder in a jar to use as a lemon sweetener for my tea. So delicious!
I love the fact that with this recipe you not only get a delicious lemon cake with candied lemons AND a lemon glaze but you also have a tart snack for later and a syrup for whatever you want to put a lemon syrup on, in or over!
Ingredients
- 1 cup sugar
- ¾ cup water
- 1 lemon, sliced in 1/8 inch rounds
- 2 cups homemade baking mix
- 1 cup sugar
- 3 eggs, beaten
- 1 cup milk
- ¼ cup lemon juice
- 1½ cup powdered sugar
- ½ cup reserved lemon syrup
Instructions
- Add sugar and water to a large skillet over medium high heat until sugar is dissolved.
- Add lemon slices in a single layer to skillet and simmer gently for 15 minutes, turning occasionally.
- Remove from heat.
- Lay slices in a single layer on a wax paper lined pan.
- Reserve lemon syrup for glaze.
- Cool completely.
- Slice lemons in half to garnish lemon cake.
For the cake
- In a mixing bowl add baking mix and sugar. Stir until combined.
- To this mixture add the beaten eggs, milk and lemon juice. Beat on high for 3 minutes.
- Pour into a Bundt pan that has been well coated with cooking spray.
- Bake in a 350° oven for 50-55 minutes.
- Remove from oven and allow to cool in pan for about 15 minutes.
- Remove from pan to a wire rack and cool completely.
- After the cake has cooled cut slits evenly around the top of the cake big enough to insert the candied lemon slices.
- Insert cooled candied lemon slices into slits.
- Drizzle lemon glaze over top of cake.
For the lemon glaze
- In a small bowl combine the powdered sugar and lemon syrup well.
- Drizzle over cake.

You brought back memories of my mom’s lemon meringue pie which was always on the tart side and I loved it. I still make it today but nothing seems as good as mom’s did! This cake is right up there as I love lemon flavor and even put fresh lemon on my salads! Thanks Adrian…
I used to eat just plain lemons, like you would an orange, when I was a kid! I love lemons but over the years have stopped eating them. This cakes also brings back some fond memories for me:)
I too used to eat lemons in the same fashion and thought I was the only nut case out there, ha ha! I also stopped doing it for some reason or the other but I still love it with fish, chicken, salad and desserts!

Julie, no there’s no need to chill them. Just take them out of the syrup and lay them in an even layer on some wax or parchment paper to cool completely.

Oh my goodness. This Lemon Cake sounds ah-mazing and totally delicious and perfect for a hot summer’s day! I’ve never made candied lemons before, either, so this is a definite MUST try in the near future! Especially since it’s still been so hot here in Dallas.
