I LOVE these things! They are so quick and easy to throw together for the kids for a snack.
I’ve tried to stop buying junk food as their snack. Honestly. I have. Most of the time. So, because I’ve stopped trying to buy junk food, most of the time, I have to have something for my kiddos to munch on in between breakfast and lunch and lunch and dinner and after dinner, right?
Yes, they’re a growing bunch so they eat ALL! THE! TIME! I could just give them a piece of fruit or some chopped veggies (which I do, I promise) but sometimes a kid just needs something sweet, at least that’s what mine tells me. These no-bake chocolate chip granola bars are it!
And because they are made with oatmeal and honey I don’t really mind them having these bars as their “sweet”.
Ingredients
- 1 cup butter
- ½ cup honey
- ½ cup brown sugar, packed
- 2 tsps vanilla extract
- 6 cups quick-cooking oats
- 1 cup coconut flakes
- 1 cup chocolate chips
Instructions
- Melt butter in a large non-stick pot over medium high heat.
- Stir in the honey and brown sugar. Bring to a low simmer. Allow to simmer, without stirring, for 2 minutes.
- Remove from heat and stir in the vanilla extract.
- Quickly stir in oats and coconut flakes until completely blended.
- Let cool for approximately 10 minutes and fold in chocolate chips.
- Press FIRMLY into a 9x13 pan that has been sprayed with cooking spray.
- Refrigerate until firm, 1-2 hours.
- Remove from pan and cut into bars.
- Wrap individually and store in an airtight container in the refrigerator or freeze for up to 3 months.
Check out where I linky party!
I see nothing wrong with a sweet treat once in awhile and wouldn’t feel guilty feeding them these at all. And at least you know what’s in them! All my big kids would love these……. You know, over the gums and through the lips, look out tummy, here comes the YUM!
You’re absolutely right, Regina. I do know what’s in these because I put it there and my kids love them. So much better for them than the store-bought kind and a lot cheaper too:)
Those look awesome! I never knew it would be so easy to make granola bars. Cannot wait to try.
Can’t wait to try them! Have a good day
Visiting from Tasty Tuesdays. I love granola bars especially if there’s a little chocolate in them. I co-host Sweet and Savoury Sunday and would love for you to stop by and share this and other recipes with us. Have a great day!
Visiting from Teach me Tuesdays. You had me at NO BAKE! These seriously look delicious, and since it’s summer I hate turning on my oven. These would be the perfect sweet snack I crave daily! Thanks! Pinning this.
You had me at no-bake, too! Treats every now and then are okay, I think, especially if the kids can help out to make it. It actually looks like I have all the ingredients. I’ll be surprising my kids with these, thanks.
Sounds yummy and easy. I found you on Tasty Tuesday and I’m doing a no-bake call out on my recipe link party The Yuck Stops Here this week and would like to invite you to join. The party will be open this week until 8pm ET Sunday evening on my blog Hot Momma’s Kitchen Chaos. I really hope to see you there! HUGS
