No-Bake Chocolate Chip Granola Bars

I LOVE these things!  They are so quick and easy to throw together for the kids for a snack.

I’ve tried to stop buying junk food as their snack. Honestly. I have. Most of the time. So, because I’ve stopped trying to buy junk food, most of the time, I have to have something for my kiddos to munch on in between breakfast and lunch and lunch and dinner and after dinner, right?

Yes, they’re a growing bunch so they eat ALL! THE! TIME! I could  just give them a piece of fruit or some chopped veggies (which I do, I promise) but sometimes a kid just needs something sweet, at least that’s what mine tells me. These no-bake chocolate chip granola bars are it!

And because they are made with oatmeal and honey I don’t really mind them having these bars as their “sweet”.

No-Bake Chocolate Chip Granola Bars

Ingredients

  • 1 cup butter
  • ½ cup honey
  • ½ cup brown sugar, packed
  • 2 tsps vanilla extract
  • 6 cups quick-cooking oats
  • 1 cup coconut flakes
  • 1 cup chocolate chips

Instructions

  1. Melt butter in a large non-stick pot over medium high heat.
  2. Stir in the honey and brown sugar. Bring to a low simmer. Allow to simmer, without stirring, for 2 minutes.
  3. Remove from heat and stir in the vanilla extract.
  4. Quickly stir in oats and coconut flakes until completely blended.
  5. Let cool for approximately 10 minutes and fold in chocolate chips.
  6. Press FIRMLY into a 9x13 pan that has been sprayed with cooking spray.
  7. Refrigerate until firm, 1-2 hours.
  8. Remove from pan and cut into bars.
  9. Wrap individually and store in an airtight container in the refrigerator or freeze for up to 3 months.
