There’s nothing like coming home from a long day of pleasing other people and having a nice big pot of stew ready to be served up for your tasting pleasure. This is not just any stew. No, sir. This is a slow cooker sausage and sweet potato stew that is sure to make your taste buds jump for joy!
Can you see all the yumminess going on in here? This pot is full of sausage, sweet potatoes, onions and garbanzo beans (chickpeas) that have been slowly simmering in beef broth all day long.
It takes less than 15 minutes to get this going before you head out the house in the morning, or night, depending on your schedule:) But no matter what time you eat dinner this stew is sure to please.

Ingredients
- 1½ lbs cooked smoked sausage, cut into bit sized pieces
- 4 small to mediums sweet potatoes, cut into about 1 inch chunks
- 1 small onion, chopped
- 1 15oz can garbanzo beans, rinsed and drained
- 4 cups beef broth
- ¼ cup stew juice
- 1 tbsp cornstarch
Instructions
- In a slow cooker add the sausage, sweet potatoes, chopped onion, garbanzo beans and broth.
- Stir to combine.
- Cook on low 7-8 hours or on high 3-4 hours.
- Remove about ¼ cup stew juice from the slow cooker and stir in the cornstarch until completely combined and free of any lumps.
- Pour the juice/cornstarch mixture back into the slow cooker and give it a gentle stir.
- Cook on HIGH 20-30 minutes more or until slightly thickened.
