What is it about S’mores this year? Not only have I seen them everywhere but so have my kids. I don’t know why we are seeing more of these different recipes than years past but maybe it’s on a trend cycle. You know, like the bell bottoms jeans? Popular, then not popular for 30 years, then popular again…maybe, maybe not.

Anywho, the kids have begged and begged to make S’mores. Outside, with a fire and with real sticks…the traditional way. It sounds nice unless you live in my part of the woods (and I mean that literally, we live in the woods).
Not only do you have the nice crackling of a warm fire on an extremely warm night and the smells of marshmallows getting more than slightly burnt over said fire BUT here you have a horde of mosquitoes sucking out every ounce of your life blood, a gang of sand flies, a squad of deer flies and then these pesky little something or others that my dad refers to as “noseeums”. Nobody know what they are because you can’t see them (no see ums) but they will gnaw on your flesh just like a hungry mouse gnaws on a hunk of cheese:)
Most city folk think that if you have a fire burning the bugs will leave you alone. They will if the fire is mostly smoking and then the humans can’t breathe around the fire either. The little critters still win!
Smore’s? Outside? No thank you!
So I made a deal with my kiddos. We can make S’mores as long as we can come up with a recipe that all of us can do inside. They have to all agree on the recipe and no one can complain later about not doing the S’more thing over a fire pit outside.
This S’mores Bars recipe is what we came up with and everyone was happy…well, except for the bugs:)

Ingredients
- 8-10 whole graham crackers
- 3 cups all-purpose flour
- 2/3 cup cocoa
- 1 ½ cups sugar
- 1 cup brown sugar, packed
- 2 cups semisweet chocolate chips, divided
- 4 eggs, slightly beaten
- 1 cup canola or vegetable oil
- 2 tsp vanilla extract
- 2 cups miniature marshmallows
Instructions
- Preheat oven to 350°
- Layer the bottom of a 13 x 9 inch baking pan with a single layer of graham crackers.
- Set aside.
- To a large mixing bowl add flour, cocoa, both sugars, and 1 cup of the semisweet chocolate chips.
- Stir until blended.
- Add to the dry ingredients the eggs, oil and vanilla extract.
- Mix until combined.
- Spread evenly over the top of the graham crackers.
- Bake at 350° for 25-30 minutes or until toothpick inserted near middle comes out clean.
- Sprinkle top with marshmallows and the remaining cup of semi-sweet chocolate chips.
- Bake for an additional 5 minutes or until marshmallows are slightly puffed and golden brown.

These bars look so tasty. I have to admit, even though I am a huge outdoors girl and we camp a lot during the summer, I don’t really care to roast marshmallows and make s’mores. I love the taste, but the mess and burnt marshmallows have never been appealing. I love your recipe because I can skip all of that and go straight to the good stuff! I am pinning this one to save for our next camping trip. Who know’s…I may start a new tradition!

Boy do I agree, outside at this time of year at night, NOT! We’re in the woods also and after all the rain this year, it’s horrible! I have company coming this weekend and this would be a lovely treat, gotta try it
Now what to fix for dinner is what I have to figure out! On the trending side, I think you’re right. Once someone posts something, it seems like everybody wants to get on the same band wagon. Hey, I still wear my bell bottoms, can’t seem to shake those Hippie Days!!!!!!
I love brownies with marshmallows! So delicious. We had smores the other day…well, to be truthful we only roasted marshmallows. It was fun, but more like a once or twice a year event! LOL. Have a great day!
