I have two delicious recipes for you guys today. I make them both to have with each other. The first one is a tasty spicy bean dip and the second is some yummy homemade tortilla chips to eat with your spicy bean dip.
Let’s start with the first one…
My kids like my homemade refried beans, especially when I make it into a bean and cheese dip. I like it too, but it needed something more. Know what I mean? I had a can of chipotle salsa just sitting in the kitchen cabinet waiting to be used and I thought the bean dip would pair perfectly with this salsa.
Now, here is your fair warning! I like spicy food. My dad believed in putting a whole lot of spice in his food, so my taste buds have acclimated to some serious hotness. As a matter of fact, if I hadn’t been making this for the kids I would have chopped up some jalapeno for a little MORE kick. This dip is a little on the spicy hot side so if spicy hot ain’t your thang you can always substitute the chipotle salsa with a milder salsa.
Either way you decide to have it, spicy or not, it’s still a delicious dip to have on hand for a quick snack.
Now on to recipe two…
You can’t have a spicy bean dip without chips. You. just. can’t. I like making my own homemade tortilla chips. They’re quick, easy and good! Not to mention you can make a huge pile for less than two dollars. You can either fry or bake these. Either way is a good way:) I like both ways.
I don’t season my chips with anything because the dips I make have plenty of seasoning in them. You can always dress your chips up with whatever flavors your craving at the time. A little salt, pepper, Cajun, etc. Just sprinkle some on your chips immediately after cooking.
So in about 30 minutes time you can have a scrumptious spicy bean dip with homemade tortilla chips snack.
Ingredients
- 2 cups homemade refried beans (or 1 can)
- 1 can (7oz) chipotle salsa (or mild salsa)
- 1 small tomato, chopped, divided
- 1 cup sharp cheddar, shredded
- fresh chopped or dried cilantro
- Flour tortillas, cut in ¼
Instructions
- Combine refried beans, salsa and half of the chopped tomato in an oven proof bowl.
- Sprinkle with cheese.
- Cook in a 350° preheated oven for 10-15 minutes or until cheese is melted and bubbly.
- Garnish with the other half of chopped tomato and cilantro.
- Serve with homemade or store bought tortilla chips.
FOR THE CHIPSTO FRY...
- Heat oil in skillet over medium heat.
- Add cut up tortillas in a single layer.
- Fry 2-3 minutes on each side or until brown and crisp.
- Drain on paper towels.
- Cool completely.
TO BAKE...
- Layer cut up tortillas in a single layer on baking pan.
- Bake in a 350° preheated oven for 7 minutes.
- Flip and cook an additional 4-5 minutes or until brown and crisp.
- Cool completely.
