Vanilla Cupcake with Chocolate Frosting

It’s been some time since I posted a recipe using homemade baking mix. These vanilla cupcakes with chocolate frosting are a great reason to have this baking mix on hand as much as possible.  It literally took me less than 10 minutes to have this cupcake batter ready to go in the oven. Can’t beat that for a homemade cupcake! And while these moist delicious babies were cooking in the oven I took the time to mix up the homemade chocolate frosting, which also took less than 10 minutes. I then placed the frosting in the fridge to chill until the cupcakes finished cooking and cooling.

So, minus the cooking and cooling times and add in the frosting of the cupcakes it took me about 30 active minutes to have homemade vanilla cupcakes with chocolate frosting.

I piped my frosting onto the cupcakes just because that’s what I like to do but you could totally just use a butter knife and spread that yummy chocolate frosting over the tops of these babies. I don’t even use a real piping bag. I use a Ziploc freezer bag with a frosting tip inserted into the snipped off end. Pretty fancy, huh?

I also added a little decoration to the top. They’re mini cake balls that I found on sale for $0.25 a box at the store. Didn’t really add anything to the taste of the cupcakes but it made for a pretty little decoration:)

Vanilla Cupcakes with Chocolate Frosting

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 50 minutes

Yield: 12 cupcakes

Serving Size: 1 cupcake

Ingredients

    For the cupcakes
  • 1½ cups baking mix
  • 1 3.4 oz instant vanilla pudding
  • ¾ cup sugar
  • 3 eggs, beaten
  • 2 tsp vanilla extract
  • 2/3 cup milk
  • For the chocolate frosting
  • ½ cup unsweetened cocoa
  • 1 cup butter, softened
  • 3 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp milk

Instructions

    For the cupcakes
  1. Combine baking mix, instant vanilla pudding and sugar in a mixing bowl.
  2. Add beaten eggs, vanilla extract and milk.
  3. Beat on low for 30 seconds.
  4. Turn mixer to high and beat for an additional 2 minutes.
  5. Prepare 12 muffin cups with cupcakes liners or spray with non-stick cooking spray and fill ¾ full with batter.
  6. Bake in a 350° oven for 20-24 minutes or until toothpick inserted in middle of a cupcakes comes out clean.
  7. Cool in pan on a wire wrack for 5 minutes.
  8. Remove cupcakes from muffin pan to wire wrack and cool completely.
    For the chocolate frosting
  9. Add cocoa to a mixing bowl and use a fork to break up any large clumps.
  10. Add softened butter to cocoa and mix on low until combined.
  11. Slowly stir in 3 cups powdered sugar, vanilla extract and 2 tbsp milk.
  12. If frosting is too thick continue adding 1 tsp of milk until desired consistency.
  13. Pipe or spread onto completely cooled cupcakes.
